Celebrity chef Emeril Lagasse had a “Big Night Out” in Florida at The Ritz-Carlton Amelia Island’s renowned restaurant, Salt.

Tune in Sunday, January 11, 2015 at 2:30 p.m. eastern time to the Cooking Channel to watch this famous chef enjoy one of the top dining experiences in the state of Florida. (The show will also be repeated on Jan. 12th at 9:30 a.m. and Jan. 15th at 10:30 a.m.)

Amelia Island Restaurant Week

In conjunction with Amelia Island’s annual “Restaurant Week” event (happening January 16 – 25, 2015), The Ritz-Carlton, Amelia Island is offering an exclusive dinner featuring a group of local Amelia Island chefs and restaurant owners. The event, January 15, 2015 at 6 p.m., will feature “A Tribute to Modern Southern Cuisine” theme, with chef’s each preparing a course with their personal flare on Southern classic food. The event will begin with a wine tasting and passed hors d’oeuvres. At 6:45 p.m. a seated dinner will take place in the Ritz-Carlton’s Café 4750. The dinner will include four-courses plus a decadent dessert.

Participating local chefs and courses are: T.J. Pelletier from The Salty Pelican (Butternut Squash and Shrimp Bisque with a Southern Style Shrimp Po’Boy); Roberto Pestana from Espana (Panko encrusted Diver Sea Scallops over Lobster, Bay Scallop and Andouille Sausage Jambalaya); Andrew Yeo from The Ritz-Carlton, Amelia Island (Sherry Glazed Crispy Pork Belly, Tomatillo Relish, Bacon Powder, Collard Greens); Scott Schwartz, 29 South (Braised Veal Cheek on Congaree and Penn Sweet Corn Middlins, Brown Butter Carrot Mousse Hickory Smoked Almonds). The event will conclude with an indulgent dessert by The Ritz-Carlton, Amelia Island’s Sheldon Millett. The dessert will offer a trio of sorbets including Key Lime Cream, Strawberry Shortcake and S’more Chocolate. Cost for this special dining experience is $68 per person (plus gratuity).
